Zucchini with Vegetable Quark Filling

Ingredients
- 500 g zucchini (2 zucchinis)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 Garlic clove
- 30 g Parmesan cheese (1 piece)
- 4 sprigs Parsley
- 250 g low-fat quark
- 1 egg yolk
- 0.5 tsp sweet paprika powder
- Salt
- Pepper

Wash, trim, halve zucchini lengthwise and scoop out the flesh. Dice the flesh into small cubes. Wash, trim and dice bell peppers. Peel garlic and finely chop.

Grate parmesan. Wash parsley, shake dry and chop.

Whisk quark with egg yolk, parmesan, parsley and paprika powder. Fold in vegetable cubes and garlic, then season with salt and pepper.

Fill zucchini halves with the quark mixture and place them in a baking dish. Pour a little water over them and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 30 minutes.
