Ingredients

  • 2 cans (185 g each) Saupiquet tuna fillet
  • 20 paccheri
  • Salt
  • 10 Cherry tomatoes
  • 4 basil leaves
  • 1 tsp tomato paste
  • freshly ground pepper
  • sugar
  • 3 sun‑dried tomatoes, oil‑packed
  • 2 Tbsp capers (jar)
  • 125 g ricotta
  • dill sprigs

Instructions

    Drain the tuna, reserving the oil, and finely chop the tuna into very small pieces. Cook the paccheri in boiling salted water according to package instructions and drain. Wash the cherry tomatoes and basil, blend them with five tablespoons of the reserved tuna oil and tomato paste, then strain.

    Season with salt, pepper and sugar and set aside cold. Pat the sun‑dried tomatoes dry, finely dice them, mix with capers and tuna, setting aside a portion for garnish; stir the remaining mixture into ricotta.

    Fill the paccheri with the tuna cream, place on plates, and garnish the openings of the pasta with the remaining chunky tuna mixture. Serve decorated with tomato sauce and dill.
