Ingredients
- 600 g pumpkin flesh (butternut)
- 4 fresh garlic cloves
- 2 sprigs Rosemary
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 60 g bread crumbs
- 1 tbsp freshly chopped rosemary
- 50 g grated Parmesan
- 2 tbsp liquid butter
- 200 ml whipping cream
- thyme (for garnish)
Instructions

Preheat the oven to 200°C with fan and top heat.

Slice the pumpkin into thin wedges. Spread on a baking tray together with pressed garlic cloves and trimmed rosemary sprigs, drizzle with oil, season with salt and pepper, and bake for about 25 minutes.

For the topping mix Panko breadcrumbs with chopped rosemary, Parmesan and butter.

Remove the pumpkin from the tray (discard the rosemary sprigs) and divide into four oven‑proof ramekins. Pour cream over, sprinkle with breadcrumb mixture, and gratinate in the oven for 10–15 minutes.

Serve garnished with thyme.
