Stuffed Mushrooms with Feta and Herbs

Ingredients
- 300 g Portobello gourmet mushroom (or champignons)
- 125 g feta
- 1 Garlic clove
- 4 tbsp Lemon juice
- 4 tbsp olive oil
- Pepper (freshly ground)
- 1 Mint sprig
- 8 slices baguette
- 1 Garlic clove

- thyme (for sprinkling)

Wipe the mushrooms dry with a kitchen towel, break off the stems and set aside for another use. Drain or pat the feta dry and crumble it. Peel the garlic, press it through a garlic press, and mix with lemon juice, oil, and pepper. Place the mushroom caps on a grill rack (or in a grill pan) facing up. Drizzle with the seasoned oil and sprinkle with feta. Hang the rack in the grill and grill the mushrooms for 4‑5 minutes. Wash the mint, shake dry, pluck the leaves from the stems, and roughly chop them. Sprinkle the grilled mushrooms with mint before serving.
