Stuffed Meatballs

Ingredients

  • 600 g mixed ground meat
  • 2 spring onions (finely chopped)
  • 1 garlic clove (finely chopped)
  • 1 carrot (grated)
  • 1 tbsp rosemary (finely chopped)
  • 2 Eggs
  • breadcrumbs
  • Salt
  • Pepper (freshly ground)
  • 125 g mozzarella
  • 2 tbsp black olives (pitted)
  • 2 tbsp green olives (pitted)
  • olive oil

Instructions

    Knead the ground meat with the spring onions, garlic, carrot, rosemary, salt, pepper and eggs until a smooth, moldable dough forms. Gradually add breadcrumbs spoonful by spoonful until the mixture is firm but not too soft. Drain and finely chop the mozzarella. Finely chop the olives. Shape into balls, create a cavity, fill with olives and mozzarella, then reseal each ball. Place the meatballs on a lightly oiled grill rack in the oven and slide them under the hot broiler (not too close to the heat). Grill each side for about 5-6 minutes.

    Alternatively, brush the balls with oil and sear them in a grill pan from both sides. Serve with a lukewarm vegetable salad.
