Stuffed Flatbread with Salad

Ingredients

  • 200 g mixed salad
  • 50 g alfalfa sprouts
  • 50 g soybean sprouts
  • 50 g lentil sprouts (or radish sprouts)
  • Salad cucumber
  • 4 tomatoes
  • 50 g black olives (pitted)
  • 4 tbsp corn kernels (canned)
  • 2 tbsp white wine vinegar
  • Salt
  • ground pepper
  • 2 tbsp olive oil
  • 100 g sheep cheese
  • 1 large flatbread

Instructions

    Rinse the salad, optionally trim and pat dry. Rinse sprouts and drain. Rinse cucumber and dice small. Rinse tomatoes, quarter and remove seeds. Slice tomatoes into strips. Slice olives. Drain corn.

    Mix vinegar with salt, pepper and olive oil in a large bowl. Toss prepared ingredients with dressing.

    Dice sheep cheese and fold in.

    Cut flatbread open and fill with salad mixture. Divide into four portions.
