Stuffed Bell Peppers with Beans and Ground Meat

A stuffed bell pepper with beans and ground meat really boosts fat burning, thanks to the vitamin C in the peppers.

Ingredients

  • 4 yellow bell peppers
  • 1 stalk leeks
  • 200 g canned kidney beans
  • 1 egg
  • 2 tbsp tomato puree
  • 400 g minced beef
  • Salt
  • ground cumin
  • Cayenne pepper
  • 2 tbsp olive oil
  • 2 tbsp freshly chopped coriander leaves

    Wash the bell peppers, halve them and clean. Line a baking sheet with parchment paper and place the pepper halves on it.

    Clean the leeks and cut into rings. Rinse the beans in a sieve and drain well. Mix the leeks with the beans, egg, tomato puree and minced beef. Season with salt, cumin and cayenne pepper, then fill the pepper halves. Drizzle with olive oil and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 30 minutes until golden brown. Serve garnished with coriander leaves.
