Ingredients
- 1 red bell pepper
- 2 tbsp olive oil
- 1 onion
- 2 tbsp Tomato paste
- 200g canned kidney beans
- 150g canned soybeans
- 225g canned corn kernels
- 400g diced tomatoes (1 can)
- 1 tsp chili seasoning
- Salt
- black pepper (freshly ground)
- 1 pinch cayenne pepper
- 400ml vegetable broth
- 1 tbsp chopped coriander
Instructions

Cut the bell pepper into cubes after washing, halving, de-seeding and removing white membranes. Peel and finely chop the onion.

Sauté the pepper and onion in hot oil in a pot for several minutes while stirring; add tomato paste and stir, then pour in tomatoes with their juice and bring to a boil.

Add drained beans and corn, pour in broth, season with salt, pepper, cayenne pepper and chili seasoning, and bring slowly to a simmer. Cook over low heat for about 30 minutes, tasting again before serving sprinkled with coriander.
