Ingredients

  • 750 g turkey schnitzel
  • Salt
  • Cayenne pepper
  • 2 untreated lemons
  • 2 bunches spring onions
  • 3 tbsp sunflower oil
  • 2 tsp flour
  • chicken stock (glass)

Instructions

    Wash the turkey schnitzel, pat dry and cut into bite‑sized pieces. Season with salt and cayenne pepper and set aside.

    Heat one lemon, dry it, grate the zest finely. Sprinkle half of the grated zest over both sides of the turkey pieces and let rest for 15 minutes. Cut both lemons in half and squeeze out the juice.

    Wash the spring onions and slice into thin rings. Heat the oil and brown the turkey pieces vigorously. Add the spring onions and cook briefly together.

    Dust the turkey with flour. Mix lemon juice with chicken stock, pour over the meat, bring to a boil and simmer for 10 minutes on medium heat. Season with salt and cayenne pepper, sprinkle remaining zest. Garnish with spring onions and serve.
