Vegetable quinoa is an excellent simple lunch dish – the Spoonsparrow recipe contains many healthy and tasty ingredients.

Ingredients

  • 150 g quinoa
  • 300 ml Vegetable broth
  • 4 tomatoes
  • 1 onion
  • 1 Garlic clove
  • 1 Zucchini
  • 2 yellow bell peppers
  • 2 tbsp olive oil
  • Salt
  • a splash lemon juice
  • Pepper (freshly ground)
  • curry powder
  • ground cumin
  • 1 tbsp chopped parsley

Instructions

    Rinse the quinoa under running water until clear. Bring the broth to a boil, add the quinoa, cover and simmer over low heat for about 15 minutes. Remove from heat, drain if necessary, and let cool.

    Wash the tomatoes, quarter them, remove seeds, and dice. Peel and finely dice the onion and garlic clove. Wash, trim, and dice the zucchini. Wash, halve, trim, and dice the bell peppers. Sauté the onion and garlic in hot oil until translucent. Add the zucchini and pepper cubes and sauté together for 3-4 minutes. Fold in the tomatoes and season with salt, lemon juice, pepper, curry, and cumin.

    Fold in the quinoa, let it heat through, taste the vegetable quinoa, stir in parsley, and serve.
