Ingredients
- 1 stalk leeks
- 480 g chicken breast fillets (4 fillets)
- 1 Garlic clove
- 0.5 tsp Curry Powder
- Salt
- Cayenne pepper
- 2 tbsp olive oil
- a splash lemon juice
- 1 tbsp radish sprouts
- 10 g chives (0.5 bunch)
- 50 g Parmesan cheese (1 piece)
- 40 g yogurt (1.5% fat)
- 40 g sour cream
- 4 avocados
Instructions

Wash, trim and slice leeks into rings. Rinse chicken under cold water, pat dry and cut into small pieces.

Peel garlic, finely chop and mix with chicken, curry powder, salt and cayenne pepper.

Heat oil in a pan. Cook leeks and chicken mixture over medium heat for 4–5 minutes. Remove from heat, let cool slightly and season with lemon juice.

Rinse sprouts and drain. Wash chives, pat dry and cut into small rolls. Grate parmesan.

Whisk yogurt with sour cream. Halve avocados and remove pits.

Spoon some yogurt mixture and parmesan into each avocado half. Top with chicken mixture and sprinkle with sprouts and chives.
