Strawberry Yogurt Terrine

Ingredients

  • 8 sheets white gelatin
  • 500 g yogurt (1.5% fat)
  • 100 g Granulated Sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 200 g Low-fat quark
  • 1 tbsp orange juice
  • 150 g whipping cream
  • 300 g Strawberries
  • 2 sprigs Mint

Instructions

    Soak the gelatin sheets in cold water.

    Whisk yogurt with sugar, lemon juice, vanilla extract and quark until smooth.

    Remove gelatin from water, squeeze out excess liquid and dissolve it in a small pot over low heat while stirring. Remove from heat, fold in a little of the yogurt mixture, then combine thoroughly with the remaining yogurt mixture. Beat cream to stiff peaks with an electric mixer and fold into the yogurt blend.

    Clean strawberries, remove stems, wash, and slice.

    Line a long, half-round mold with plastic wrap. Arrange strawberry slices overlapping slightly in the mold. Gently spread the yogurt mixture over the fruit and smooth it out. Cover and refrigerate for at least 4 hours to set.

    Transfer the terrine onto a plate and carefully lift off the plastic wrap. Rinse mint leaves, pat dry, and pick off small pieces. Slice the terrine with a sharp knife and serve garnished with mint leaf fragments.
