Strawberry Yogurt Muffins

Strawberry yogurt muffins from Spoonsparrow: The batter is quick to mix and wonderfully moist – must try!

Ingredients

  • 200 g strawberries
  • 175 g spelt flour type 1050
  • 100 g rolled oats
  • 2 tsp Baking powder
  • 1 tsp Baking Soda
  • 1 egg
  • 75 g raw cane sugar
  • 1 Tbsp vanilla sugar
  • 80 ml Rapeseed oil
  • 125 g yogurt (3.5% fat)
  • 80 ml Milk (3.5% fat)

Instructions

    Clean, wash, pat dry and chop strawberries into small pieces.

    Mix flour with rolled oats, baking powder and baking soda.

    In another bowl whisk egg with sugar until frothy. Add vanilla sugar and oil, then stir in yogurt and milk. Fold in the dry mixture. Gently fold in strawberries.
