Ingredients

  • 100 g dried cherries
  • 300 g dark chocolate
  • 250 g softened butter
  • 200 g whole cane sugar
  • 0.5 tsp Sea Salt
  • 1 packet Bourbon vanilla sugar
  • 2 Eggs
  • 300 g whole wheat flour
  • 100 g rolled oats
  • 1 packet baking powder

Instructions

  1. 1.

Coarsely chop the chocolate. Place 100 g in a bowl and melt over a hot water bath. Set aside the remaining chocolate.

  2. 2.

Beat butter with sugar, salt, and vanilla sugar until fluffy. Gradually add eggs, then fold in the melted chocolate.

  3. 3.

Mix flour, oats, baking powder, and chocolate chips in a bowl; add to the butter mixture, stir into a smooth dough, and chill for about 1 hour.

  4. 4.

Using an ice cream scoop, form roughly 30 half-spheres and place them on two parchment-lined trays with some space between each.

  5. 5.

Bake the cherry cookies in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 15 minutes. Remove and cool completely on a wire rack.
