Strawberry Tiramisu in a Glass with Ladyfingers

Ingredients

  • 100 g ladyfingers (with sugar crust)
  • 500 ml milk
  • 3 tbsp cornstarch
  • 1 Vanilla bean
  • 3 tbsp sugar
  • 1 egg yolk
  • 400 g Strawberries
  • 50 g almond sticks
  • 2 tbsp strawberry liqueur (optional)
  • mint (for garnish)
  • 200 g whipping cream
  • 1 Tbsp vanilla sugar

Instructions

    Cut the ladyfingers into 1 cm thick slices. Wash the strawberries; slice one large strawberry for garnish. Cut the remaining strawberries into wedges and mix with the liqueur. Heat the milk in a saucepan. Whisk the cornstarch with 5-6 tbsp cold milk, add sugar and vanilla bean seeds, stir. When the milk begins to boil, gradually pour in the thickened mixture while stirring constantly; bring to a boil once, remove from heat, let cool slightly, then whisk in the egg yolk. Beat the cream with vanilla sugar until stiff peaks form; pipe 2/3 into a pastry bag with a rosette tip and refrigerate.

    Roast the almond sticks lightly in a dry pan without oil.

    Add 2 tbsp of strawberries to each glass, top with 1/3 of the vanilla custard, sprinkle some ladyfinger pieces, add a few almond flakes, then another 2-3 tbsp of strawberries and the remaining whipped cream. Spread the rest of the custard over the top, distribute the remaining ladyfingers mixed with strawberries, dust with half of the remaining almonds, and garnish with whipped cream. Chill the strawberry tiramisu in glasses for at least 2 hours and serve garnished with almonds, strawberry slices, and mint.
