Blueberry Pudding

Ingredients

  • 1 EL sugar
  • 1 EL water
  • 300 g blueberries
  • 1 EL Grand Marnier
  • 170 g flour
  • 120 g sugar
  • 3 eggs
  • 300 ml whipping cream
  • 1 pinch salt

    In a pan mix 1 EL sugar and 1 EL water and melt the sugar over low heat. Add the blueberries and simmer for 5 minutes, then add the Grand Marnier. Preheat oven to 180°C.

    Whisk flour, sugar, eggs, salt and cream into a rather liquid batter. Distribute blueberries in four small ramekins and fill with batter. Place in a baking tray filled with water and bake at high heat for 30 minutes. Dust with powdered sugar and serve warm.
