Strawberry Shortcake with Quark Cream and Fruits

Ingredients
- 250 g beautiful strawberries
- 1 can mandarins (175 g drained weight)
- 6 sheets of white gelatin
- 350 g quark
- 2 Eggs
- 70 g sugar
- 1 packet vanilla sugar
- 1 tbsp Lemon Juice
- 40 ml Grand Marnier
- a pinch salt
- 300 g whipping cream
- 3 tbsp strawberry jam
- 500 g small beautiful strawberries
- 100 g mandarins (from the can)
- 1 packet white cake glaze
- 4 tbsp almond slivers
- 3 eggs
- 80 g sugar
- 30 g soft butter
- 80 g flour
- 1 tsp Baking powder
- 50 g ground almonds

Melt butter and let it cool slightly.

Beat eggs with sugar until frothy, stir in butter, then fold in flour, baking powder, and almonds.

Fill the prepared springform pan with the batter and bake at 200°C for about 15 minutes until golden yellow. Remove the finished base from the oven, let it cool slightly, carefully loosen it from the rim of the springform with a thin knife, transfer to a kitchen rack, let it cool completely, and refrigerate for at least 2 hours.

Wash, clean, and dice the strawberries for the filling.

Drain the mandarins.

Soak gelatin in cold water.

Separate eggs. Mix yolks with quark, sugar, vanilla sugar, lemon juice, and Grand Marnier.

Dissolve gelatin in a small pot over gentle heat, mix with some of the quark mixture, then fold into the quark batter and set aside to cool.

Beat egg whites with a pinch of salt until stiff; beat cream until stiff. Fold both into the quark mixture, return to the fridge, and when the mixture begins to gel (after about 30 minutes), stir in diced strawberries and mandarins.

Cut the cake horizontally, place the springform ring on the base, pour in the cream, then top with the second base. Refrigerate for about 3 hours.

For decoration, clean, wash, and quarter strawberries.

Stir strawberry jam with about 1 tbsp water and spread over the cake.

Briefly toast almonds in a dry pan without oil.

Top the cake with strawberries and arrange mandarins in the center.

Prepare cake glaze according to package instructions, coat the entire surface with a thin layer, and sprinkle almond slivers along the edge.
