Ingredients

  • 5 eggs
  • 125 g sugar
  • 1 pinch salt
  • 75 g flour
  • 50 g cornstarch
  • 40 g ground almonds (peeled)
  • sugar for dusting
  • 400 g Strawberries
  • 200 g Cream cheese
  • 1 tbsp orange juice
  • 50 g powdered sugar
  • 200 g whipping cream
  • powdered sugar for dusting
  • 2 tbsp toasted almond flakes

Instructions

    Separate the eggs and place the yolks in a mixing bowl. Add about two thirds of the sugar and beat the yolks with a hand mixer until light and creamy. Whisk the egg whites with the salt until stiff peaks form, gradually adding the remaining sugar. Fold the meringue into the yolk mixture.

    Sift flour and cornstarch over the batter, sprinkle ground almonds on top, and gently fold everything together with a spatula. Spread the dough onto a baking sheet lined with parchment paper and bake in a preheated oven at 200 °C (180 °C fan) for 10–12 minutes on the middle rack.

    Dust a large kitchen towel with sugar, carefully transfer the sponge cake onto it, brush the parchment with cold water, and gently lift it off. Using the towel, roll the sponge immediately and let it cool.

    Wash, trim, and slice the strawberries. Mix cream cheese with orange juice and powdered sugar. Whip the cream until stiff peaks form and fold into the cream cheese mixture.

    Unroll the cooled sponge carefully, spread the filling over it, top with sliced strawberries, and re-roll using a clean kitchen towel. Chill the strawberry roll for about an hour before serving.

    Dust with powdered sugar and sprinkle toasted almond flakes on top. Slice and serve the strawberry roll with cream cheese.
