Strawberry Puff Pastry Cutlets

Ingredients
- 450 g puff pastry (frozen)
- 1 egg yolk
- 1 tbsp milk
- 2 tbsp fine sugar
- 800 g fresh ripe strawberries
- 80 g sliced almonds
- 400 ml whipping cream
- 50 g powdered sugar
- 1 sachet vanilla sugar
Instructions

Preheat the oven to 200 °C with top and bottom heat.

Thaw the puff pastry and roll it into a rectangle the size of your baking tray. Place on parchment paper. Whisk the egg yolk with milk and brush over the pastry. Sprinkle with sugar and prickle the dough several times with a fork.

Bake in the preheated oven for about 15 minutes until golden brown. Remove and let cool.

Wash, clean, and depending on size leave whole or halve/quarter the strawberries.

Toast the almonds in a dry pan until golden. Whip the cream, gradually adding powdered sugar and vanilla sugar. Spread over the cooled pastry base, top with strawberries, sprinkle with toasted almonds, cut into pieces and serve.
