Spoonsparrow Strawberry-Melon Salad: Refreshing melon pieces and strawberries combine into a vitamin- and mineral-rich fruit salad.

Ingredients

  • 500 g strawberries
  • 1 melon (e.g., Charentais)
  • 1 Lime
  • 1 small orange
  • 2 tbsp Maple syrup
  • 3 sprigs lemon thyme
  • 2 tbsp coconut blossom sugar

Instructions

  1. 1.

Gently wash the strawberries with water in a bowl. Pat dry on paper towels and set aside.

  2. 2.

Trim the stems and cut each strawberry into halves or quarters, depending on size.

  3. 3.

Halve the melon, scoop out seeds with a spoon, peel, and slice the flesh into thin ribbons.

  4. 4.

Wash the lime, dry it, and finely grate 1 tsp of zest into a bowl.

  5. 5.

Cut the lime and orange in half, squeeze their juice into the bowl, and add the lime zest. Stir in the maple syrup.

  6. 6.

Carefully fold the strawberries and melon ribbons into the dressing.

  7. 7.

Rinse the lemon thyme, shake off excess water, pluck leaves, and set aside some for garnish. Chop remaining leaves and grind with coconut blossom sugar using a mortar or food processor until fine.

  8. 8.

Serve by arranging the strawberry-melon salad in small bowls. Sprinkle the thyme-sugar mixture over the top and garnish with the reserved thyme leaves.
