Ingredients
- 3 sour apples
- 300 g plums
- 4 tbsp sugar
- 1 packet Bourbon vanilla sugar
- 100 ml water
- 150 g whipping cream (stiffly whipped)
- 2 tbsp caramelized sugar
- dark chocolate (shredded)

Peel, halve, core the apples and cut them into wedges. Wash the plums, halve them, pit them, and combine with the apples, water, vanilla sugar, and sugar in a pot.

Bring to a boil, then simmer covered for 3-4 minutes.

Puree the compote finely and let it cool. Once cooled, fill glasses, sprinkle caramelized sugar on top, add a dollop of whipped cream, and garnish with shredded chocolate.
