Ingredients

  • 1 kg apricots
  • 250 g redcurrants
  • 100 g sugar
  • 2 lemons (juice)
  • 200 ml freshly squeezed orange juice
  • 400 g gelatin sugar (2:1)
  • 40 ml orange liqueur

Instructions

    Wash the apricots, halve them, remove pits and roughly cube. Wash the redcurrants, strip off stems and combine with the apricots in a pot. Mix in the sugar and lemon juice and let stand for 2 hours.

    Bring about 100 ml water to a boil and simmer gently for about 20 minutes while stirring occasionally. Strain through a muslin-lined sieve and allow to drip slowly; do not squeeze too hard. Top up with orange juice to reach 800 ml. Bring together with the gelatin sugar and orange liqueur to a boil and cook bubbling for 4 minutes. Perform a setting test, fill prepared jars, seal tightly, let cool, then flip again. Allow to cool completely.
