Ingredients
- 250 g sweet cherry
- 250 g honeydew melon (peeled)
- 4 tbsp rosé wine
- 1 piece lemon zest
- 1 tbsp Lemon Juice
- 2 tbsp sugar
- 1 cinnamon stick
- 0.5 tsp cornstarch
- 125 g whipping cream (min 30% fat)

Wash the sweet cherries, drain, pit them and catch any juice if desired. Cut the melon flesh into small pieces.

Bring the wine with the lemon zest, lemon juice, sugar, and cinnamon stick to a boil; add the cherries and melon pieces and simmer until the fruit is tender yet still slightly firm.

Whisk the cornstarch with a little cold water and use it to thicken the fruit mixture as needed.

Remove the cinnamon stick and lemon zest, portion the pudding and chill. Before serving whip the cream stiffly and spoon a dollop over each serving.
