Strawberry Gazpacho

The fruity strawberry gazpacho from Spoonsparrow refreshes in a healthy and tasty way.

Ingredients

  • 500 g strawberries
  • 0.5 small watermelon
  • 1 red bell pepper
  • 1 small chili pepper
  • 2 Spring Onions
  • 10 g Mint (0.5 bunch)
  • 2 tbsp lemon juice
  • 200 ml tomato juice
  • Salt
  • Pepper

Instructions

    Wash, clean and halve the strawberries. Pit the watermelon and cut the flesh into pieces. Wash the bell pepper, halve it, remove seeds and cut into pieces. Wash the chili pepper and cut into pieces. Clean the spring onions and cut into pieces. Wash the mint, pluck the leaves and roughly chop them.

    Add the prepared ingredients with lemon juice and tomato juice to a blender and blend until a soup-like consistency is achieved. Add a little water if needed.

    Season the strawberry gazpacho with salt and pepper and adjust the taste with more lemon juice as desired. Divide the gazpacho into 4 bowls or glasses and serve.
