Ingredients
- 1300 g red cabbage
- 1 tsp salt
- Pepper
- 1 tbsp Raw cane sugar
- 1 tsp ground cinnamon
- 5 tbsp white wine vinegar
- 2 tbsp lemon juice
- 2 tbsp walnut oil
- 50 g walnuts
- 2 oranges
Instructions
-
1.
Remove the outer leaves of the cabbage and wash it. Quarter, remove the core, and cut into fine strips. Mix the cabbage strips with 1 tsp salt in a bowl and knead for 4–5 minutes to soften them as much as possible. Discard the released liquid.
-
2.
Combine the cabbage with pepper, raw cane sugar, cinnamon, vinegar, lemon juice, and walnut oil. Roughly chop the walnuts and roast them in a hot pan without fat until fragrant. Remove and let cool.
-
3.
Peel the oranges with a knife so that all white pith is removed. Cut the fruit segments into wedge shapes with the knife. Roughly cut orange slices, mix them with the walnuts under the cabbage, and serve the fruity red cabbage salad.
