Garlic Almond Gazpacho with Grapes

Ingredients
- 250 g white bread
- 4 Garlic cloves
- 50 g ground almonds
- 3 tbsp olive oil
- 2 tbsp sherry vinegar
- 1 tbsp Lemon Juice
- 700 ml clear broth (ready-made)
- Salt
- ground pepper
- 100 g baguette
- 200 g seedless green grapes
- Lemon balm (for garnish)
Instructions

Coarsely break the white bread. Pour 300 ml lukewarm water over it and let soak for 15 minutes.

Peel the garlic and press it into the soaked bread. Add almonds, olive oil, vinegar, and lemon juice, then blend everything until smooth. Stir in the broth and mix again thoroughly. Season with salt and pepper. Refrigerate for 1 hour.

Slice the baguette thinly and toast. Rinse and halve the grapes. Stir the soup once more and adjust seasoning. Plate with toasted baguette slices and grapes, garnish with lemon balm, and serve.
