Strawberry Chocolate Cake
The Strawberry Chocolate Cake from Spoonsparrow is delicious, fresh and chocolatey! Without baking, this healthy chocolate treat can be made easily.
Ingredients
- 200 g whole wheat cookies
- 300 g dark chocolate
- 80 g Butter
- 4 tbsp cocoa powder
- 10 sheets gelatin
- 500 g Low-fat quark
- 50 g Raw Sugar
- 200 g Sour Cream
- 300 g whipping cream
- 8 strawberries

Process cookies into crumbs for the base. Melt 100 g of chocolate over a double boiler, stir in butter, then fold in crumbs and add 1–2 tbsp cocoa powder.

Transfer dough to a springform pan, spread evenly on the bottom, press firmly, and use extra dough along the edges. Chill for at least 30 minutes.

Simultaneously melt remaining chocolate over a double boiler. Soak gelatin sheets in plenty of cold water. Whisk quark with sugar until smooth. Squeeze out excess water from gelatin and dissolve it in a small pot over medium heat; stir into melted chocolate, add sour cream, then quickly fold the chocolate mixture into the quark, adding more cocoa powder if desired for intensity. Once the mixture starts to set, whip cream stiffly and fold it in.

Spread the chocolate mixture over the prepared base and chill again for at least 4 hours.

Before serving, dust the cake with remaining cocoa, wash strawberries, pat dry, halve them, and arrange decoratively on top of the cake. Remove from the pan and cut into slices to serve.
