Strawberry Cheesecake without baking is a light summer treat! Try this delicious cheesecake from Spoonsparrow.

Ingredients

  • 150 g Wholemeal biscuits
  • 100 g liquid butter
  • 1 tsp cinnamon
  • 500 g strawberries
  • 1 Organic Lime
  • 500 g cream cheese
  • 200 g Low-fat quark
  • 50 g raw cane sugar

Instructions

    Crush the biscuits into fine crumbs in a food processor.

    Mix the biscuit crumbs with the liquid butter and cinnamon, spread the mixture on the bottom of the springform pan lined with baking paper, press it well and chill for 10 minutes.

    Meanwhile, clean, wash and hull the strawberries, setting aside about ten beautiful strawberries. Puree 150 grams of strawberries in a mixer or with a hand blender. Cut the remaining strawberries into bite-sized pieces. Rinse the lime hot, dry it, zest it and squeeze the juice.

    Mix the cream cheese, low-fat quark, lime juice, half of the lime zest and sugar with a whisk to a smooth mixture. Take the springform pan with the biscuit base out of the refrigerator and spread half of the cream cheese mixture on the bottom. Spread the strawberry puree and strawberry pieces on top. Carefully spread the remaining cream cheese mixture on top.

    Place the Strawberry Cheesecake in the freezer for about 1 hour before serving. Decorate with the remaining strawberries and lime zest before serving.
