Quick Berry Ice Cream

Ingredients

  • 350 g mixed berries (frozen)
  • 0.5 lemon
  • 125 ml buttermilk
  • 1 tsp cinnamon
  • 4 tbsp liquid honey
  • 2 sprigs lemon balm

Instructions

    Place berries in a tall container and let thaw for about 5 minutes. In the meantime, squeeze 1-2 tbsp of juice from the lemon.

    Mix buttermilk, cinnamon, honey, and lemon juice.

    Pour the seasoned buttermilk over the berries and puree everything finely with an immersion blender. Place the ice cream in the freezer for 10 minutes. Scoop out balls with an ice cream scoop. Wash the lemon balm, shake dry, pluck the leaves and garnish the ice cream with them.
