Ingredients

  • 300 g butter cookies
  • 120 g liquid butter
  • 600 g strawberries
  • 6 sheets gelatin
  • 500 g cream cheese
  • 1 tbsp grated orange zest (unprocessed)
  • 4 egg whites
  • 75 g powdered sugar
  • 75 ml whipped cream
  • elderflower blossoms (for garnish)

Instructions

    For the cake base, finely crumble the cookies and mix with the butter into a paste. Place a ring mold on a plate, line it with cling film or parchment paper, and press the cookie paste into the bottom. Chill in the refrigerator. For the filling, wash, trim, and halve the strawberries.

    Soak the gelatin sheets in cold water. Mix cream cheese and orange zest together. Warm 5 tbsp of this mixture in a saucepan and dissolve the drained gelatin in it. Stir the gelatin into the remaining quark mixture. Beat the egg whites with powdered sugar until stiff peaks form and fold them in. Whip the cream to stiff peaks and gently fold into the quark mass.

    Spread half of the strawberries on the cake base and smooth the cream over them. Chill in the refrigerator for about 4 hours.

    Just before serving, remove the ring mold, peel off the film or paper, distribute the remaining strawberries on top of the cake, and decorate with elderflower blossoms.
