Almond Apple Cake

The almond cake with apples by Spoonsparrow is always wonderfully good.

Ingredients

  • 400 g tart apples
  • 200 g soft butter
  • 120 g whole wheat sugar
  • 3 eggs
  • 0.5 tsp organic lemon zest
  • 100 g low-fat quark
  • 350 g spelt flour type 1050
  • 50 g cornstarch
  • 1 packet baking powder
  • 100 g peeled, ground almond kernels

    Wash, peel, quarter the apples and remove the core. Slice half of the apples into thin rounds; finely grate the rest.

    Beat the butter with whole wheat sugar until fluffy. Gradually fold in the eggs and lemon zest, whisking to keep it airy. Squeeze out excess liquid from the grated apples and stir into the quark mixture. Combine flour, cornstarch, baking powder and almonds, then fold into the egg batter. If the dough feels too thick, add a splash of milk.

    Pour the batter into a greased springform pan if needed, top with apple slices, and bake in a preheated oven at 180 °C (160 °C fan; gas level 2–3) for 50–70 minutes. Test with a skewer. Remove, let cool in the pan for 5 minutes, loosen the edge with a sharp knife and lift out. Cool on a wire rack. Dust with powdered sugar if desired before serving.
