Ingredients

  • 1 bunch fresh peppermint
  • 2 untreated lemons
  • 80 g pine nuts
  • 2 tbsp apple juice
  • 3 tbsp honey
  • 1 tbsp Crème fraîche
  • 4 tbsp heavy cream

    Wash the peppermint, shake dry (set aside some for garnish), pluck leaves from stems and roughly chop.

    Rinse lemons hot. Grate the zest of one lemon and squeeze its juice. With a zester cut thin strips from the other lemon’s peel. Lightly toast pine nuts in a pan without fat, remove and let cool. Set aside 1 tsp for garnish. Blend peppermint, pine nuts, lemon juice, half the lemon zest, apple juice, and 1 tbsp honey finely. Mix remaining lemon zest with 2 tbsp honey. Wash strawberries, pat dry and clean. Slice them thinly with a sharp knife, arrange on a plate and drizzle with the honey-lemon mixture. Cover for about 20 minutes to marinate. Whisk apple-mint pesto with crème fraîche and cream. For serving, distribute strawberries onto dessert bowls, drizzle with mint sauce, and garnish with mint leaves, pine nuts, and lemon zest.
