Burger with Ostrich Steak

Ingredients
- 1 Avocado
- 1 splash Lemon juice
- Salt
- Pepper (freshly ground)
- 1 Spring onion
- 2 handfuls mixed salad greens (radicchio, arugula, lollo rosso, sorrel)
- 1 large tomato
- 4 thin ostrich steaks (about 100 g each)','2 tbsp plant oil','60 g canned corn kernels','4 ciabatta rolls

Peel the avocado, halve it, remove the pit and mash the flesh with a fork. Season with lemon juice, salt and pepper. Wash, trim and slice the spring onion into thin rings. Rinse, dry and tear the salad greens as needed. Slice the tomato into four thick rounds after removing the stem.

Rinse the meat, pat dry, season with salt and pepper, then sear in a hot pan with oil for 1–2 minutes on each side. Briefly sauté the drained corn to warm it through.

Halve the rolls horizontally and layer them with salad and tomato slices. Arrange the steaks topped with corn, spread avocado on top, and sprinkle with spring onion rings. Place the tops back on and serve.
