Ham Roast with Brussels Sprouts

Ingredients
- 800 g ham roast (lightly cured)
- 2 tbsp olive oil
- Pepper (freshly ground)
- 600 g Brussels sprouts
- Salt
- 600 g young, waxy potatoes
- 3 tbsp olive oil
- 2 tbsp butter
- Nutmeg (freshly grated)

Preheat the oven to 160°C fan.

Wash the ham, pat dry, brush with oil and season with pepper. Roast on a rack in the oven (with a fat pan underneath) for about 1 hour.

Meanwhile, wash and trim the Brussels sprouts and cook them in boiling salted water for about 15 minutes. Drain, shock, and let drain well.

Wash the potatoes, cut into wedges, mix with 3 tbsp oil, salt, and pepper, spread on a baking sheet and bake in the oven for about 35 minutes until golden brown.

Sauté the Brussels sprouts in a hot pan with melted butter, season with salt, pepper, and nutmeg.

Remove the ham, slice it, and serve plated with the potatoes and Brussels sprouts.
