Stirred Plum Cake

Ingredients
- 75 g soft butter (for greasing)
- 250 g sugar
- 400 g plums
- 250 g butter
- 1 pinch salt
- 5 eggs
- 2 tsp Baking powder
- 500 g flour
- 120 ml milk

Preheat the oven to 180°C with fan and top heat.

Grease the springform pan. Spread a thin layer of butter along the rim and a thicker layer on the bottom. Sprinkle 50 g sugar over it. Wash, pit, and halve the plums. Place them cut‑side down side by side on the pan base.

For the batter whisk the butter with salt until fluffy. Alternately fold in the remaining sugar and eggs. Then gradually stir in the flour mixed with baking powder and milk, mixing briskly until a smooth, spreadable dough forms. Spread over the plums and level the surface. Bake for about 50 minutes (test with a skewer).

Remove from oven, let cool completely, then turn out onto a plate and serve.
