Stir‑Fry with White Turnips and Pine Nuts

Ingredients
- 800 g fresh white turnip (with greens)
- 4 cloves garlic
- 1 Shallot
- 100 g raisins
- 30 g Butter
- 200 g vegetable broth
- 100 g peeled pine nuts
- Salt
- pepper (from grinder)
Instructions

Wash the turnips, shake off excess water, trim and remove the stems from the leaves and white turnips. Slice the leaves into strips and cut or shave the turnips into thin slices.

Peel the garlic cloves and slice them as well. Peel and finely dice the shallot. Soak the raisins in lukewarm water.

Heat butter in a pan and sauté the garlic and turnip slices for 3‑5 minutes until golden brown. Add the turnip leaves, wilt briefly, then deglaze with broth. Simmer on medium heat for 7‑10 minutes.

Meanwhile, roast the pine nuts without added fat in another pan until golden brown, remove and set aside. Season the vegetables with salt and pepper, fold in the raisins and pine nuts, stir briefly, and serve plated from the pan.
