Ingredients
- 1 kg broccoli florets
- 2 Garlic cloves
- 200 ml whipping cream
- 200 ml milk
- 2 tbsp crème fraîche
- 3 eggs
- 80 g grated Gouda cheese
- Salt
- ground pepper
- freshly grated nutmeg
- 2 onions
- 1 tbsp flour
- oil for frying

Wash broccoli florets and blanch in salted water for about 2 minutes. Cool under cold water and drain. Transfer to a large or two smaller baking dishes.

Peel garlic cloves and finely chop them.

Whisk together cream, milk, crème fraîche, garlic, and eggs. Season well with salt, pepper, and nutmeg. Sprinkle cheese over the mixture and bake in a preheated oven at 180°C (356°F) for about 20-25 minutes until golden.

Meanwhile, peel onions and slice into rings. Toss them lightly with flour. Fry in hot oil in batches until golden brown. Drain on paper towels, season lightly, and sprinkle over the gratin before serving.
