Ingredients
- 2 Zucchini
- 2 Garlic cloves
- 4 tbsp olive oil
- 1 tsp freshly chopped thyme
- Sea salt
- pepper (ground)
- 300 g canned chickpeas
- 300 g young spinach
- 1 bunch mint
- 1 tbsp capers
- 0.5 lemon (juice)
- 200 g feta

Preheat the grill.

Wash, trim and cut zucchini into thick slices. Peel and finely chop garlic; mix with oil and thyme, then coat zucchini. Let sit for about 20 minutes. Remove from mixture, place on hot grill and cook 6-8 minutes per side. Season with salt and pepper.

Rinse chickpeas and drain well. Wash spinach and mint, dry thoroughly. Combine remaining oil, chickpeas, zucchini, capers and lemon juice; season with salt and pepper. Sprinkle crumbled feta over the mixture before serving.
