Stewed Beef with Rice

Ingredients
- 1 kg beef stew meat
- 2 shallots
- 2 Garlic cloves
- 2 cm fresh ginger
- 2 cm galangal
- 1 stalk lemongrass (white part only)
- 2 dried chili peppers
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp ground Turmeric
- 2 tbsp Vegetable oil
- 400 ml coconut milk
- 2 kaffir lime leaves
- 1 tsp tamarind paste
- 250 g Basmati rice
- Salt
- black pepper (ground)
- 1 tsp Lime juice
- 2 tbsp freshly chopped cilantro
- red chili flakes

Rinse the meat, pat dry and cut into bite‑sized cubes. Peel and chop the shallots, garlic, ginger, and galangal. Cut the lemongrass into pieces and combine all aromatics with chilies, cumin, coriander, and 1 tsp turmeric in a blender to make a paste. Sauté this paste in hot oil until it turns lightly brown. Add the beef and sear briefly. Deglaze with coconut milk, add kaffir lime leaves and tamarind paste, then simmer gently for about 2 hours, adding water as needed.

Rinse the rice under cold water and cook it in double‑strength salted water with the remaining turmeric for about 25 minutes until tender.

Season the stew with salt, pepper, and lime juice. Serve over the cooked rice on plates, garnished with cilantro and chili flakes.
