Ingredients

  • 250 g mushrooms (e.g., button, shiitake)
  • 3 cloves garlic
  • 20 g Ginger
  • 3 spring onions
  • 600 g light fish fillet (e.g., red snapper)
  • 2 tbsp Lime juice
  • light soy sauce
  • Salt
  • Pepper
  • 50 g rice flour
  • 4 tbsp soybean oil
  • 150 g canned black beans

Instructions

    Clean the mushrooms and slice them. Peel and finely chop the garlic and ginger. Wash and trim the spring onions, cut a few thin strips for garnish, then finely chop the rest.

    Rinse the fish and pat dry. Cut into bite‑sized pieces, drizzle with lime juice and 1 tbsp soy sauce, season with salt and pepper. Coat the fish in rice flour, tapping off excess. Heat 3–4 tbsp oil over high heat and fry the fish until crispy on all sides, about 5 minutes. Remove and keep warm.

    Heat the remaining oil and add garlic, ginger, and spring onions. Sauté for 2–3 minutes. Add mushrooms and cook briefly. Drain the beans, roughly chop them, and add to the pan. Season with soy sauce and pepper. Plate the mixture, arrange the fish on top, and garnish with green onion slices.
