Malaysian Beef Curry

Ingredients

  • 200 g basmati rice
  • Salt
  • 2 onions
  • 3 bell peppers (red, yellow and green)
  • 500 g beef (e.g., sirloin)
  • 2 Garlic cloves
  • 1 tbsp plant oil
  • 1 tsp ground turmeric
  • 0.5 tsp cumin (ground)
  • 1 pinch ground cloves
  • 1 pinch Cinnamon powder
  • 1 pinch ginger powder
  • 200 ml meat broth
  • 200 ml unsweetened coconut milk (canned)
  • Cayenne pepper
  • cilantro leaves (for garnish)

Instructions

    Rinse the rice in a sieve and bring to a boil with about twice the amount of water and a pinch of salt. Cover and let it simmer for about 20 minutes over low heat.

    Peel and dice the onions. Wash, halve, de-stem and cut the bell peppers into pieces. Rinse the beef, pat dry and slice into strips. Peel and finely chop the garlic cloves.

    Brown the beef in hot oil, then add onions, garlic, peppers, turmeric, cumin, cloves, cinnamon and ginger; sauté for 1-2 minutes. Deglaze with meat broth and coconut milk, stirring occasionally, and let it simmer gently for about 10 minutes. Add more broth if needed.

    Season with salt and cayenne pepper, serve over rice in bowls, and garnish with cilantro.
