Ingredients

  • 1 stalk leek
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 600 g sausages (e.g., Cabanossi)
  • 800 ml vegetable broth
  • Salt
  • Pepper (freshly ground)
  • 250 g Cherry Tomatoes
  • 3 tbsp crème fraîche
  • 2 tbsp freshly chopped basil
  • 50 g freshly grated Parmesan

Instructions

    Slice the leek lengthwise, rinse, clean and cut into thin rings. Peel the garlic cloves, finely chop and sauté with the garlic in a pot of hot oil until translucent.

    Peel the sausages, cut into bite-sized pieces and add to the leek. Sauté briefly, then deglaze with broth. Season with salt and pepper and simmer over medium heat for about 15 minutes. Wash the tomatoes, halve them and stir in the crème fraîche. Taste, sprinkle with basil and Parmesan, and serve. Optionally offer Spirelli pasta on the side.
