Alsatian-Style Stew

Ingredients

  • 250 g pork neck
  • 250 g lamb meat (e.g., shoulder)
  • 250 g beef brisket
  • 4 shallots
  • 2 Garlic cloves
  • 20 g fresh parsley
  • 4 sprigs thyme
  • 2 Bay leaves
  • 0.5 l dry white wine
  • 200 g onions
  • 600 g waxy potatoes
  • Salt
  • Pepper

Instructions

    Wash all meats, pat dry and cut into about 2.5 cm cubes. Peel the shallots and garlic; slice shallots into rings and finely chop garlic. Mix meat with shallots, garlic, drained herbs, bay leaves, and wine in a bowl, cover and marinate in the refrigerator for 24 hours.

    Preheat the oven to 200°C (400°F) fan‑fry. Peel onions and potatoes and cut into slices. Layer meat, onions, and potatoes in a fireproof stoneware dish, seasoning each layer with salt and pepper, finishing with a top layer of potatoes. Pour the remaining Marinade over the layers. Seal the dish well and braise for 2–2.5 hours. Taste and serve.
