Kale and Potato Stew with Sausages

Ingredients
- 600 g kale
- 2 handfuls wild herbs (e.g., dandelion, lamb's quarters, sorrel, chickweed, ginseng)
- 250 g mostly waxy potatoes
- 4 onions
- 4 pork sausages
- 2 tbsp Rapeseed oil
- 1 l meat broth
- 3 bay leaves
- 1 tsp peppercorns
- 1 tsp juniper berries
- 1 tbsp Medium-hot mustard
- 2 tbsp crème fraîche
- Salt
- pepper (ground fresh)
- Nutmeg (freshly grated)

Wash the kale and remove tough stems. Roughly chop. Rinse the herbs, pluck leaves, and roughly chop. Peel the potatoes and dice about 1 cm cubes. Dice onions finely. Slice the sausages.

Heat oil in a large pot over high heat and sauté onions until translucent. Add sausage slices and cook for a few minutes. Pour in broth and add potatoes. Place bay leaves, peppercorns, and juniper berries in a tea bag and drop it in. Simmer gently for 10-15 minutes. Add kale and herbs; simmer another 5-8 minutes. Remove the herb sachet and stir in mustard with crème fraîche. Season with salt, pepper, and nutmeg before serving.
