Ingredients

  • 800 g porcini mushrooms
  • 4 tbsp Walnut oil
  • 4 shallots (finely chopped)
  • 2 slices ham (finely diced)
  • 2 garlic cloves (finely chopped)
  • 2 tbsp clarified butter
  • 150 g spinach
  • Salt
  • Pepper (freshly ground)

Instructions

    Clean the porcini, trim stems and dice finely; cut caps crosswise into thin slices.

    Wash spinach thoroughly, wilt in a small amount of water until it collapses, remove, shock in cold water, squeeze out excess moisture, then finely chop.

    Combine shallots, mushroom cubes, garlic, ham, and spinach; season with salt and pepper. Sauté in hot oil while stirring for about 10 minutes.

    Sear the mushroom slices in hot oil in batches for about 5 minutes each, seasoning with salt and pepper, then plate alongside the spinach mixture.
