Steamed Vegetables

Ingredients
- 800 g carrots
- 1 tbsp butter
- Salt
- freshly ground pepper
- 0.5 tbsp raw sugar
- vegetable broth
- 1 tbsp Lemon Juice
- 0.5 bunch Parsley

Peel, wash the carrots and cut them diagonally into slices or thin sticks.

Melt the butter in a pot or wide pan and sauté the carrots over low to medium heat while stirring for 2 minutes. Season with salt and pepper. Sprinkle the carrots with sugar and allow them to caramelize.

Add the broth and lemon juice – just enough to cover the bottom of the pan lightly. Cover the carrots and cook over weak to medium heat for about 4 minutes, checking doneness!

Wash the parsley, shake dry, cut the leaves into fine strips and mix into the carrots. If desired, thicken the cooking liquid with a little cream or cold butter pieces and serve the carrots on a plate. You can also steam other vegetables such as fennel, zucchini, kohlrabi, or bell pepper in the same way.
