Ingredients

  • 2 large trout (or 4 small, ready to cook)
  • 0.5 bunch flat-leaf parsley
  • 2 carrots
  • 1 bundle soup vegetables
  • Salt
  • ground pepper
  • 2 Garlic cloves
  • 2 Tomatoes
  • 5 tablespoons olive oil
  • 0.125 dry white wine
  • 1 lemon

Instructions

    Rinse the trout inside and out under running water and pat dry with paper towels. Wash the parsley, trim the stems and finely chop. Season the trout with salt and pepper. Peel and finely chop the garlic.

    Briefly blanch tomatoes in boiling water, shock in cold water, peel, core, and dice small. Cut peeled carrots and cleaned soup vegetables into small pieces. Heat olive oil in a large pan, sauté garlic and vegetables with parsley briefly. Then push the vegetables to the side of the pan.

    Place the trout in the pan and sear for about 1-2 minutes on one side, then flip and sear the other side for another 1-2 minutes. Add wine, squeeze lemon juice and add a portion of it. Cover the pan and steam for about 10 minutes over low heat.

    Add tomato cubes and season with remaining lemon. Serve the trout topped with vegetables and remaining parsley.
