Steamed Stonefish on Vegetable Sauce

Ingredients
- 10 sardine fillets
- 1 tbsp chopped mint
- 8 garlic cloves
- 4 stonefish fillets (200 g each)
- flour (for dusting)
- 4 tbsp extra virgin olive oil
- 4 shallots
- 2 Celery stalks
- 1 Carrot
- 300 ml dry white wine
- 1 can pizza tomatoes (400g)
- 300 ml fish stock
- 3 tbsp chopped parsley
- Salt
- ground black pepper
- roasted bread slice (for serving)
- butter (for serving)
Instructions

Preheat the oven to 200ºC.

Rinse sardine fillets cold, pat dry and roughly chop. In a blender combine with mint and 4 garlic cloves and blend finely. Score each fish fillet 3-4 times and spoon the anchovy mixture into the cuts. Then dust the fish with flour.

Heat oil in a pan and briefly sear the fish, remove and set aside. Finely chop remaining garlic. Peel and halve shallots, trim celery and slice thinly. Peel carrot and cut diagonally into half-moons. Sauté vegetables in cooking fat, pour in white wine and stock, bring to a boil once.

Place fish fillets on top and bake in the oven for about 15 minutes.

Season with salt and pepper. Plate in bowls or on plates, garnish with parsley and extra pepper before serving.
