Ingredients

  • 1 sea bass (whole, ready to cook, about 1.2 kg)
  • lemon juice (to drizzle)
  • Salt
  • Pepper (freshly ground)
  • 75 g breadcrumbs
  • 50 g butter pat
  • 12 small shallots
  • 1.5 tbsp liquid honey
  • 200 ml dry white wine
  • 4 sprigs thyme

Instructions

    Preheat the oven to 180°C (356°F) with upper and lower heat. Wash the fish, pat it dry, drizzle with lemon juice, season with salt and pepper, lightly coat in breadcrumbs, and place on a baking sheet lined with parchment paper. Sprinkle with butter pats and bake in the preheated oven for 40-45 minutes, turning once.

    Remove the onions and sauté them in melted butter until golden brown. Add the honey, allow it to caramelize slightly, then deglaze with wine. Add thyme and let reduce a bit. Serve the fish and onions arranged on a plate together.
