Steamed Shrimp on Cucumber Watercress Salad

Ingredients
- 8 large shrimp (prepped)
- 1 stalk lemongrass
- Salt
- 1 cucumber
- 2 packs daikon watercress (or garden cress)
- 50 g ginger
- 1 tbsp honey
- lime
- 4 tbsp rapeseed oil
- 200 g whipping cream
- Salt
- pepper (ground)

Wash and pat shrimp dry. Clean lemongrass stalks, wash, split lengthwise and quarter diagonally. Thread one shrimp onto each lemongrass skewer. Salt and place in a greased bamboo steamer. Bring water to boil in a wok and steam the shrimp in the bamboo steamer covered for 5 minutes.

Peel cucumber and slice thinly lengthwise.

Trim the watercress and mix with cucumber slices.

For the salad sauce, blend ginger with pickling liquid, honey, lime juice, oil and sour cream; season with salt and pepper to taste.

To serve, arrange cucumber and watercress on a plate, place two shrimp skewers on top, and drizzle with the salad sauce.
